Posted by Aarti on August 11th, 2010 . Filed under: Uncategorized .I know how off-putting Indian food may appear to some of you. There’s all the spices, the weird names that don’t roll off your tongue easily, and those overly spicy dishes you may have tried at an Indian restaurant.
Or at least that’s what people want you to think. Or more accurately, want me to think…
That’s why I am geeking out right now!
Because you guys have been making my recipes, and loving them!!
WOOOHOOOOO!
Really you guys, you spoil me. I am ecstatic that you are actually trying out my recipes! Especially those of you who don’t normally try Indian food. That flatters me more than you know.
And can I tell you a secret? It also relieves me that the recipes stand up to other hands making them! You never know whether you’ve really remembered everything necessary to make the recipe just perfect — it’s so important to me that you can trust the recipe. It’s as if that recipe is a promise. Like, I promise you if you make it this way, it’ll turn out grand.

And The Enchanted Cook already tried out my “Friday Shrimp” recipes for this past Sunday! She says it’s her favourite shrimp recipe now. Pretty amazing, right?

The Coconut-Gazpacho soup looked and sounded yummy … I am a pure vegetarian and I would love to try making this w/o the shrimp. Oh! a special mention for your chicken green curry …YUM-O!! slurp slurp….I am going to make that with tofu instead. I think you get some unbelievable reviews from the judges, you do a great job with introducing Indian tastes to non-Indian palates … that’s not an easy task but you do it with style and ease!!

I’ve tried at least a half dozen of your recipes and I LOVE THEM ALL. I even got inspired to make my own Indian-esque recipe and that turned out great too! It was an Indian inspired chicken caesar salad – fantastic, and entirely based on everything you’ve taught me about Indian flavors. Thanks for being awesome!

Aarti, would you ever consider sharing a vindaloo recipe? I LOVE vindaloo, but the paste just isn’t the same, and we don’t live anywhere near an Indian place. I’m sure you have nothing else to do at the moment but consider my request (ha!) but I thought I would ask anyway.

I’ve never been to an Indian restaurant, but my husband has. And since I love to cook, I attempted Chicken Tikka Masala and Naan about 6 months ago, and now it is one of my FAVORITE dishes. Everything you cook looks absolutely amazing (especially all the shrimp dishes from this week’s episode!!), and you’ve inspired me to branch out and try some other Indian dishes. Not only do I have some recipes from your blog bookmarked, but I also have an Indian cookbook on hold from the library! My husband and I are definitely rooting for you! I can’t even imagine what it is like to be under so much scrutiny and pressure on TV, but you’re doing fantastic. Hang in there and best of luck!

I have to admit that, as a trained pastry cook, I doubted your Samosa dough recipe: the written recipe just looked like oil overkill. However, the dough is really amazing! I had been using a generic curry puff recipe, but I like yours much better.
Anyway, I stuffed my Samosas with leftover chicken curry, and they were delicious!
Can’t wait to try the shrimp recipes!

Best of luck on Sunday, I have always been very put off by Indian spices, but I have been very taken by your dishes. Almost everything you have prepared this season has made me want to rethink that and try some new flavors. I think that is what NFNS is all about. Well I’ve tried some of your recipes and I was never disappointed.
First we tried your mom’s dal recipe, and it kicked our old dal recipe to the curb (sowwy grandma). It was light and delicious. Thank you for sharing it with all of us.
I also tried your baked samosas. Easy, yummy recipe. After they came out of the oven, everyone gobbled them up. There was none left over.
I’ve made your vegetarian chile and I’ve been eating it everyday for breakfast. I like savory goodness for breakfast, sweet stuff kills me. I love this chili.
I’ve printed out some more recipes, and I will make them soon.

I have been watching NFNS for several seasons and after reading your site I think you can do for Indian food what Julia Child did for French cooking. She made French cooking accessible to American household cooks, and you do the same for Indian. You take something that seems so foreign and complicated and make it friendly and simple.
I really love this site and your cooking shows. My family loves Indian food, but I have not been brave enough to try it at home until now!
Please consider writing a cookbook someday. I haven’t found an Indian cookbook yet that makes me feel like I can really cook cook Indian cuisine. Your recipes are great and I look forward to seeing more of them!

You are so right on target Aarti…..You are making these ingredients so much less intimidating to use.
I’ve had a bottle of tamarind extract in my cupboard for years with no idea how to use it. Then I tried your Wannabe Nobu Tilapia recipe. It turned out delicious and as a bonus got to use the remainder of the marinade on some boneless, skinless chicken thighs- yummy as well.
I know it seems like a little thing but having the confidence to use an ingredient that had long languished in the closet made me feel so good.
Last week, I added to the cupboard with black cardamom, fenugreek and chunky chat masala.
Looking forward to trying with confidence your recipes with an ever expanding pantry.
Can’t tell you how much I am enjoying both your website and your appearances on FN. I know you will have a bright future no matter the outcome of TNFNS

Our family has been totally loving your food, too, Aarti! (We’re rooting for ya, all the way!) We have made and LOVED the baked samosas (we used Raspberry chipotle sauce….oh!), the entire kebab/potato/raita ensemble (the potatoes are a new “keeper” around here now — who knew that panch phoron was so amazing) and next on the menu is the pea-lafels! Can’t wait! We often go with a theme for a week (or month) at a time, from Vietnamese cooking to Mediterranean to Cuban. We have all agreed Indian is the new taste at our house! Yay Aarti!

I have been watching you on “The Next Foodnetwork Star” and I’m truly hoping that you win! I’ve never eaten Indian food before because…I hate to say it…it scared me! But, you have truly shed a new light on the cuisine and I can hardly wait to go shopping for my spices and give your recipes a try! I’ve also just discovered your blog and your videos so I’ve got a lot of catching up to do. I wish you the very best and all the success you truly deserve! This Sunday, I can’t wait to watch you final 3 make your cooking shows, & I just know you’ve got to win, because your point of view is so clear, you have a radiant face and smile, your food TASTES GREAT & you’ve made Indian cooking approachable, & no one else wears a flower in their hair! That always cheers up the screen when you wear one, so keep your signature hair flower!
Keep your confidence up! I have a hard time with that, too, but remember, I can do all things through Christ who strengthens me, Philippians 4:13. Certainly the results of who will be the NFNS are already determined, but you are no less a great cook whether you win or you lose! Because of FN, I’ve also checked out your blog & your youtube posts, and your idea of a cooking variety show with music & ‘dreaming time’ is so personal and warm and awesome. I know you are probably under some contractual agreement that will not allow you to say anything prior to the finale but lets be honest. I thoroughly enjoyed this season of the Next Food Network Star even though it lacked suspense. It has been apparent for a while now that you would ultimately win and I know it must have been difficult being unable to tell anyone that you won.
All of the finalist had something that brought them there but none of them had anything on you. When I was younger I had Indian caretakers that would take care of my while my aunt was out of town or out of the country. I am not Indian in the least but seeing dishes I remember from my childhood on television, taken to the next level, is an amazing thing and adds an additional bonus to you winning this competition.
I just really wanted to say that I knew you won all along. You had an amazing passion for what you did that blazed passed the other competitors. They all had one or two things they were good at which is why there were surprises from week to week and why someone was on top one week but in the bottom for three but you consistently did a superior job. Good Job, Aarti, and Congratulations. You are the business.

Hi Aarti,
I am following NFNS since the start. You will and HAVE to win NFNS. For past many weeks I have been thinking about giving you one of my okra recipes, but was not sure if I should. These are very simple recipes, Not exactly “star” receipes, but regular Indian vegetable style I make for lunch or dinner. I am not a big okra fan, but I enjoy these dishes. I hope you don’t mind me sharing these recipes here on your blog. Hope you like them.
Vegetable 1:
- 1lb okra (okra has to be delicate. One way to look for it is, snap a small part of it’s tail. If it immediately breaks off, then it is good to use)
- 1/4 to 1/2 tsp cumin powder
- 1/4 tsp coriander powder
- 1/4 tsp – 1/2 tsp red chili powder (HOT one – Indian style..:)..)
- salt to taste
- 4-5 tbsp of oil
- 1/2 tsp black mustard seeds
- 1/2 tsp cumin seeds
- 1/8 tsp Asafoetida
- 1/2 tsp turmeric powder
- little sugar and lemon juice to taste
Procedure:
Cut the okra in thin circular slices. In a pan heat oil. Put mustard seeds until they pop, cumin seeds, Asefotida and turmeric.
Put all the okra. Saute it on a very low heat. Initially the okra becomes very sticky and mushy. But after about 20-25 min the okra starts to become crisp. Add salt, sugar, cumin-coriander powder, red chili powder, sugar and lemon juice. Saute for another 5 -10 min until nicely cooked and crisp. Turn-off the heat and its ready to eat!!!.
This can be used as a side dish or enjoy it with roti.
Vegetable 2: Stuffed Okra
- 1lb Okra
- 1/2 cup – 1cup besan (chick-pea flour)
- 1/2 tsp salt, 1/2 tsp cumin and coriander powder, 1/2 tsp red chili powder, 1/4 tsp turmeric powder.
- 5-6 tbsp oil, 1/2 tsp cumin seeds, 1/8 tsp asefotida, 1/4 tsp turmeric powder
Procedure:
Make a slit-cut to the okra length-wise. (So that we can stuff it). Then cut okra in about 1-inch lengths. In a separate bowl, mix chick-pea flour, salt, red chili powder, cumin powder, coriander powder and turmeric. This is a dry mix. Then stuff the okra pieces with dry-mix. (1/2 tbsp mix for 1 piece of okra). In a pan, heat the oil. Put in cumin seeds, asefotida, turmeric powder, and then put all the stuffed okra pieces in the oil. Keep on low heat for about 20-25 min. Saute in between, so that it will not stick. Vegetable 2 is ready. Enjoy with Roti.

I tried your coconut gazpacho and shrimp tonight! Oh my word, the shrimp was incredible!! My kitchen smells wonderful after that spice mixture the shrimp pickled in. I think I must have gotten tomatoes that were too large though because I have a TON of gazpacho leftover…yum! Any suggestions on using the leftover gazpacho for another dish?

Aside from your charming personality and your vast talent in cooking, they need some exotic cooking happening in the food network kitchens. I watch food network whenever I can, but with 2 little kids and a business, you dont get much time. I had watched an episode of NFNS here and there but this season, I saw you on it,and I loved you from the start. You were on my DVR ever since. And I am so into it that I had a dream last night that I had somehow missed the finale and I checked the FN website and saw that you were the winner. I even woke up happy LOL

Hi Aarti, I’m hoping you win NFNS, it would be great to see some Indian food on the channel. Even if you don’t, I’m going to be following your blog and recipes, I’m a Brit living in the USA and I’ve found it much harder to get Indian food here…or at least I can’t be as lazy. In England I would just buy sauce in jars, and here I couldn’t find it so started making my own which of course is MUCH better!
Best of luck for the future, you’ve inspired me to try more Indian food that is out of my comfort zone and to be honest it’s been lovely hearing a familiar accent on the tv each week!

I found you a couple of years ago and I watched your webisodes over and over and sent it to my sisters and all my friends and then all of a sudden I see that you are on the NFNS and I was totally blown away!!! I am so excited for you and I just know in my heart that you are going to win. I know this is kinda last minute and you probably already knwo the results but ALL THE BEST and I said a special prayer for you this morning at Mass asking God to give you the wisdom and courage to pull this off. I really love all the dishes you make. I am from India and absolutely love Indian food. I cook it every day almost and I just want you to knwo that if you ever need help (once you get to be the NFNS) please email me and I will be right by your side to help. I have 16 years of Restaurant experience (owned them) and although they were not Indian Restaurants I did do Indian food once a week and always had a house full.

I’m watching NFNS tonight and hope that you win!! I LOVE Indian food and have a number of cookbooks, but still find my dishes not so great. I’m really looking forward to trying your recipes. I’m trying hard to lose weight (I have diabetes) and part of that effort is to learn to cook yummy food so I stop eating junk.

Congratulations! I just watched the finale with my mom and we were both jumping for joy after seeing you win. Not gonna lie, the only reason I started to tune in to NFNS is because my mom insisted I see the “girl who had the same name.” Since then I’ve been hooked! Your recipes look so good and seem simple enough for me, a 20 year old college student, to try out. My mom and I even tried out your green chicken curry last week and it was so delicious.
So thank you for all of these wonderful recipes and for bringing my mom and me together in the kitchen. Best of luck and I can’t wait to see you on TV!

i made your earl grey kulfi pops (actually, more like elachi chai kulfi pops) to root for your and was watching the show tonight in nervous anticipation, eating everything i could basically get my hands on during commercials. the naan pizza was a super idea for the pilot! you inspire me

Aarti I am so incredibly proud of you!
Your food has completely inspired me – my family and I actually had a chance to visit India for two weeks several years ago and though it was gorgeously exotic and chaotic and a wonderful trip overall, to be honest facing down all those unrecognizable meals three times a day each and every day was often quite intimidating! But since I started watching TNFNS all the intrigue of Indian cooking has suddenly flared up and washed over my whole family. We’ve been to a local Indian restaurant 3 times in the last month – and that’s much more than we usually eat out! – and have suddenly noticed several other nearby Indian restaurants that we can’t wait to try. Even my brother, who isn’t so keen on actually eating anything with any substantial amount of vegetable or unfamiliar spice in it has been rooting for you all this time.
I can’t wait to try your recipes. I tried making samosas once before and it was a disaster – so I’m glad you have a recipe that plenty of people have declared trustworthy. I already made your huggy buggy bread pudding and it was delicious. I love the flavour the cardamom gives it!

Btw, I tried your baked samosas and they were awesome. I used a different filling but the dough was perfect. The only other thing I changed is brush the outside of the samosas with beaten egg to get more browning. Thanks for sharing the recipe!!

From day one, you shined and gave it your all which as a viewer and fan, I’ve really appreciated and enjoyed. And oh my gosh don’t even get me started on how delicious your food looks (i actually happen to be indian…so go figure). Throughout the season, me and my mom (btw, i asked my mom if i can call her mum) were rooting for you like no other and we loved watching you make the food we love and grew up eating. But of course with the volume turned way up! I just watched you win The Next Food Network Star, and I was so excited. I loved Tom and Herb, but I was really, really hoping it would be you to win. I can’t wait to see your show on Food Network. Indian Food is a new foody passion of mine that I’ve come into only in the last 8 months or so, and I’ve yet to try cooking it on my own. I just moved to Santa Cruz, and one of the first things I did was find the nearest Indian restaurant.

I knew you would win NFNS! Once you got your nerves and insecurities under control it was obvious that the judges loved your food and style and I felt you had a great advantage. Many Americans are unfamiliar with Indian food so you would be the perfect person to introduce the flavors in a less off putting way like you did with the pizza. I know I have always been afraid of Indian food, not sure what it is beyond curry and I live near Little India in New York. But after seeing you all these weeks in the competition, who knows I might give Indian food a try. Thanks and congrats!

Hey congrats on winning!! Also had a quick question about spices that hope you or another commenter can answer. I know some regions of Indian cooking call for mustard seeds or maybe some other form of mustard. Is there something I can subsitute in that case? My girlfriend is 911 peanut allergy allergic to mustard and it would be great to be able to substitute something instead of just leaving it out.

I am so looking forward to your Food Network’s show premiere. And to trying your intriguing recipes. There is nothing offputting about Indian food. At all!
I have an homage to chicken tandoor marinating in the refrigerator for tomorrow. Not your preparation because I live in the boonies and don’t have access to some of the whole spices without driving 60 miles to the nearest food aware city (Austin, Texas). But, the natural chicken thighs and yogurt had to be used or go to waste. So, I did what I could. :~)

I grew up in the “heartland of America” on a farm – far away from trying anything more “foreign” than trying Pizza Hut pizza. When I moved to LA MANY years ago, I had the opportunity to experience authentic India food and it was a very unpleasant experience to say the least. I love that you have dedicated Aarti Party to introducing Indian herbs and spices into food that is familiar to me now. I can envision that in the future, I just may give authentic Indian cuisine another chance!

My daughter and I loved the Bombay Joes recipe. It was so tasty – much better than anything I’ve ever bought out of a packet. I don’t like food that’s too spicy so I bought the tiniest serrano chile for one penny. It was my first time working with a fresh chile pepper. We had a great time cooking this meal together.

You are such a good example for me. I HATE cooking because i’m not good at it.. but you make it sooo accessable for me. i’m exACTLY who the panel of judges was trying to get to watch your show. I LOVE food (indian food especially) and i’ve always wanted to learn how to cook it! i’m a little sad they are making your show so americanized though.. i wanted to learn how to make REALLY indian food… the stuff you made during the competition. i guess i’ll just check your blog for THOSE goodies. I love to watch you cook! I’ve never explored Indian cuisine because my husband doesn’t like the flavor of curry (which I love). I am soooooo going to enjoy cooking and tasting your fabulous recipes.

To those two negative comments regarding mango sauce stomach aches –I think I’ve got an answer. It could be too much oil of mango–picked up by ingesting a bit of the peel. My friend, who has an allergy to mangos, gets those same symptoms described in the viewers comments.
I don’t believe the stomach pain is inherent in the fruit–it’s more an individual person’s body chemistry.
So they should make your other recipes, and stay away from mangos—
regardless of whose recipe they use.

Hi,
My 14 year old daughter Amanda, loves your show. Does not miss a single one (either live or recorded). She was rooting for you throughout the competition. She has gotten inspired to the point of taking a cooking class in her freshman year in high school which she has just started.
BTW, we all watch your show. Some of your recipes remind us of the stuff we love and ate growing up – coconut toffee etc.
