Tandoori Chicken Sauce (Tested!)

NB: Recipe updated with correct yogurt and oil amounts! Thanks guys for catching that! Also, I should mention that traditionally, we use red and yellow food colouring to get that nice bright orange colour. If you’re opposed to food colouring, then don’t feel obliged — it’ll still taste good. But if you’re going for authentic, then use the fake stuff without feeling any guilt! HA!

I’m about to leave town for the bachelorette party of one of my besties, so if you want the back story to Tandoori Chicken, check out this article I wrote for India Currents a little while ago.

“Tikka” means nothing more than “pieces”, so traditionally, chicken tikka might appear on your plate in the form of little charred chunks. The word “Tandoori” comes from from the “tandoor” oven — a clay oven that reaches astronomical temperatures, but maintains something of a moist atmosphere. And this spice mix is, more or less, the traditional marinade for meat, fish and vegetables that are skewered and placed in the tandoor for a fast cook.

I made this sauce on NFNS, but I was in such a rush when I made it, that when I wrote the recipe, I knew it wasn’t totally accurate. There was no way that I couldn’t let the recipe version on the FN website stand unless I’d tested it — I don’t want to let you guys down!

So I re-tested it, and I’ve come up with what I think is a much better version. I must, of course, give props to my mum, whose recipe I closely followed, making some adjustments for my palate and what I had available. This is actually a very easy recipe; the only hard part is having all these spices around. But do what my mum does: make 5 times this recipe and keep it in a glass jar hidden from sunlight and heat. The next time you’re craving some tikka, use a rounded tablespoon per cup of yogurt, alongside the garlic, ginger and oil, and you’ll be all set!

Tandoori Chicken

Marinade:
2 dried guajillo chiles (if you can’t find these, then use 2 chiles d’arbol, and more paprika for colour)
1/2 tsp fenugreek seeds
1 tsp coriander seeds
1/2 tsp fennel seeds
5 cloves
1/4 tsp ground cinnamon
2 green cardamon, green husks discarded, black seeds retained
1 black cardamon, husk discarded, seeds retained
Pinch cayenne pepper
1/4 tsp paprika
1/4 tsp ground turmeric
2 tbsp malt vinegar or lime juice
1 tsp kosher salt
1/4 cup oil vegetable/canola/peanut oil
1 cup whole fat plain yogurt
8 cloves garlic, minced (or put through a garlic press)
2″ thumb ginger, peeled and minced

1 packet of boneless skinless chicken thighs (1.5lbs usually)

1) Toast all the whole chiles and spices in a cast iron skillet until fragrant (3 minutes or so), shaking the pan or tossing the spices with a spoon. Throw into a spice grinder with cinnamon, paprika and turmeric. Grind until a fine powder.

2) In large bowl, whisk together yogurt, malt vinegar/lime juice, salt, oil and the spice mixture you just made. It should smell amazing!

3) Now here’s the thing. If you’re squeamish about chicken and salmonella etc, reserve 1/3 cup of the marinade and set aside. You can make the sauce out of this marinade. Alternatively, I just use whatever’s left after marinating the chicken, but make sure that I cook it to 160 degrees f, so that if there are any nasty bacteria in there, it’s definitely dead.

4) Prick the chicken thighs with a fork. Add the thighs to the marinade, and toss to coat. Marinate at least one hour, and at most overnight, in the fridge.

5) When you’re ready to cook, line a baking sheet with foil, and turn your broiler on. Place each chicken thigh on the baking sheet, making sure each one is coated with the marinade, but isn’t swimming in it. Reserve remaining marinade for the sauce (see step 3!). Cook chicken thigh under the broiler about 5 minutes until starting to blacken. Then turn oven down to 350, and cook another 10 minutes until meat thermometer registers 160. Remove from the oven.

6) While the chicken is cooking, pour reserved marinade into a small saucepan, along with 1/2 cup of water and 1 tsp of honey. Bring to a gentle boil over medium-low heat. Simmer until the sauce comes to 160, whisking all the time. Taste and season with salt and pepper.

7) Serve with a fresh squeeze of lime, and a drizzle of the sauce. Mum serves it with a cool potato, red onion and green bell pepper salad. I served it with a simple butter lettuce and sugar snap salad, drizzled with a totally off-the-top-of-my-head dressing: yogurt, 1 clove garlic, coupla big tablespoons of pickled ginger (the kind you get with sushi), salt and pepper. Cooling, sweet and great complement to the spicy chicken!

    A question about the Pomegranate Kebab recipe that is posted. I think you mentioned to Jonathan Waxman that you used Zaatar in them but Zaatar was omitted in the FN recipe.
    Did you use it in the kebab mixture itself or were the kebabs dusted with it before grilling?

I live in a small town in New Mexico and finding the proper spices and ingredients is a bit difficult. I’ve got a husband who REALLY wants me to learn Indian cooking and it looks like I’ve come to the right place.     I checked out your blog for the first time tonight after watching food network star and I was so pleased to see the sweet and genuine heart of yours we all see on the show overflow into the blog world, too. :)
    I’m not much of a cook. Growing up with 3 older sisters they all found their way into the kitchen to help Mom while I kinda stayed back. I’m about 12 days from heading off into a new season of life (college! eee!) and my Mom and I decided I should really start to learn to cook. So, all that to say, you have really encouraged me as I take on this new challenge of cooking! I’m so looking forward to, with my mom and sisters, cooking some of your dishes! We LOVE Indian food. :)
    Just a side note: it really touches my heart the way you talk about the Lord working in you and encouraging you. He is so great and worthy of all praise and I, too, love to see the way He transforms lives in big and “small” ways.

    I love watching you on the FNWS. I’m not someone who usually comments or participate in the network forums or rings in to vote or anything like that. So I am embarrassed to admit I sought out your blog specifically to leave you this note.
    There may be a reason I feel moved to write this. Or maybe I’ve eaten too much ice-cream. If it isn’t useful to you, please feel free to treat it as a statement of support from a fan. But here goes:
    Don’t leave anything on the table. The only thing holding you back are your fear and doubts. What are you afraid of girl? That you can’t be successful and yet authentic? Pshaw. You’ll always be you. You can’t seem to help it, and this is a good thing! You already know everything you need to know to be good at this. FNWS isn’t forever – win or lose, there have been winners who fizzle out, and so-called “losers” who went on to bigger and better things. Five years from now, it will all be a distant dream either way.
    But one thing seems clear to me. You seem to need to prove to yourself that you gave it all you got, holding NOTHING back. That you’ve stopped coasting. Well go! Eat your fears for breakfast, turn your doubts into energy. If you fumble, laugh it off – I know you know how to, I’ve seen it on your videos! The only person’s opinion that counts is yours – because right now you’re your biggest critic.
    For what it is worth, there’s at least one person out here in anonymous land who doesn’t give a carp if you win FNWS, but would love to see you bash your personal demons over the head. Because if you manage to do that, I can’t wait to see what that energy and spirit of yours unleashes onto the world!

    I just stumbled across your blog today. I’ve been watching you on NFNS, and through the magic of television, I lulled myself into believing it was more real-time than it is. I didn’t realize you’d be done filming months ago and already blogging!

    My roommate and I have been rooting for you from the beginning. We are so happy you’ve done so well. In fact, I just texted my roommate earlier to say, after watching the Iron Chef episode, that I think Bobby Flay has a food-crush on you. *grin* His comments like “I want 12 of these right now” and “This makes me want to open an Indian restaurant with you like, tomorrow” had me giggling like mad… And cheering. You destroyed that challenge and left everyone in your wake! I was positively MELTING for you when I heard all the glorious judges’ and Iron Chefs’ comments. :)

    Sadly, my roommate and I won’t be cooking all of your amazing recipes – at least not exactly as they appear here. For ethical reasons, I am a vegan and she is a vegetarian. But thankfully, Indian food is either naturally veg or very easy to veganize! I hope you don’t mind us messing with your art for the sake of our veggie tummies.

    Aarti, I found your blog during the first few weeks of NFNS and I LOVE it. Not only that, but I really hope you win (although I know you already know if you’ve won)! I’ve tried Indian food twice and had ridiculously bad food poisoning from it and have vowed to never try it again—even just the smell of it makes me sick sometimes. However, YOU make me want to try it again. One question: this recipe does not include either ginger or garlic but you mention both in the narrative bit above the recipe. I hope I can find the spices; I live in Nashville and our Indian grocery was destroyed during the flooding in May and I am not sure if it reopened. My husband and I just know you will win; he’s excited because he wants me to learn to cook Indian food. I’ve always been too intimidated to try it, but you make it seem so easy! By the way, I totally know what you mean about getting into the journalism field and then not being passionate about it. I got out of it several years ago, and have been floundering around, then finally realized about six months ago that I am really passionate about food and cooking.     Hi Aarti, Just wanted to let you know, in your honor, some of your ex-cnn fans are getting together to watch the season finale. We are having an aarti partee in your honor. Agostino & myself decided that we’d cater our co-fans by choosing a recipe, make it and serve it while we all watch the show tonite – I made the ‘Im not chicken chicken’ What a great idea to just make bone-in breasts rather than the whole chicken. I made 4 breast, 4 thighs (cause i like dark meat) & since I didnt have time to run around to try to find cardimom (my local c-town didnt have it) I found some ‘madras curry powder’ – which of course includes corriander, tumeric, cumin, fenugreek,cinnamon, anis & the list goes on – any how, it came out great with the orange zest, parsley, this curry powder and a dash of mint with the parsley.

I have a cooking school for tourists in the Caribbean (St. Kitts) where we do Caribbean dishes with a lot of folklore.
