Kebabs!

But, why not watch the Aarti Paarti video I made a few months ago, showing you HOW to make ‘em? Cool, huh? You can find it here. It features a great variety act: my excellent drummer friend, Andy. You may notice a few ingredient differences (I forgot what I had used in my original recipe!) but the technique is the same.

Oh also, one note. A commenter on the Food Network recipe seemed to take issue with using baking soda in the kebabs, because she’s watching her sodium intake. I don’t have sodium issues, so I’m not sensitive to this, but if you are, then please feel free to take it out. However, you’re only using a very small amount, and its purpose is to make the meat stick together — for some reason, it keeps the meat from falling off the skewer. Try to make it without it, and you’ll have problems. I explained this when I presented to the judges, but of course, there’s not enough time in the show to include all my noisy chatter! So if you’re wondering why I used baking soda, now you know.

Hello! I was introduced to both this recipe and your blog a few weeks ago when I had dinner at Mandi’s house and she showed me what you made her for her birthday. I made them with chicken for a dinner party a few days later and they were amazing! I’ll certainly try them with lamb soon. Good luck on the show!

I just wanted to tell you that we’re cheering you on! We’d love to see you win and can’t wait to watch your show. You have a certain charisma that a host needs that makes us want to watch and listen. Your personality is sunny and you seem to really be yourself, which is so important! Love that you have a blog!! It allows us to get to “know” you a little better. Best of luck. Just wanted to drop a note to say I love your recipes and the personal, warm, funny touch that you bring to all that you do! I’m a fan of your YT videos and am thrilled that you are on The Next Food Network Star. I don’t have a TV this summer but I DVR all the episodes at my parents’ house and that’s all I watch when I come home. Also, can I just say (in a non-creepy) that you’re adorable? As suggested, I went back to read/view your post and the lamb kebabs and pomegranate molasses – who else would offer to ship a reader a bottle of pomegranate juice?
I hope you win, but either way, I’ll continue to be a fan!

I have been waiting for an Indian Woman to come along that would be able to show the Food Network the fun life can be when you add a little spice, and finally you are here. Every season of Next Food Star they have tried out having Indian women, and though you could see the judges liked the idea, they never had the right person. I finally think they have the right person in you Aarti.
I moved to Phoenix when I was 13 from Kerala India. Me and my 2 sisters moved here with our family so that we could go to good colleges. After completing High School I went on to graduate from ASU where I then fell in love with my very own white boy. We now live west of Phoenix in Avondale where we are raising 2 Polindian girls (Half Indian, Half Polish), helping out in a church that we helped start 6 years ago, and continuing my passion for cooking.
When I got married 11 years ago, I had no clue how to cook “white boy” food, but thanks to long hours watching The Food Network, and an addiction to reading every cookbook that I can get my hands on there isn’t any food that I can bring a little spice too, and by a little I mean a lot. I’m an Indian girl, if it isn’t spicy it’s bland.
Anyway, wanted to say hi and let you know that my family is rooting for you. God Bless!

My husband and I are TOTALLY captivated by you and believe you WILL be the Next Food Network Star! You have such a refreshing personality – just a complete breath of fresh air that makes you stand above your competitors. The Indian food we’ve been exposed to has always been so strong that it lost it’s appeal. However, your recipes have both of us perking up and saying, “Huh – I’d like to try that!” I think you fill a niche Food Network desperately needs, and after reading your blog, I realize God’s favor is truly shining on you. People can’t help but fall in love with you! We believe in you and have no doubt you’re the cream of the crop

I just wanted to let you know that you’ve inspired me to try things I’ve never attempted to make before (like these kebabs, which were delicious <3) You're such a warm, genuine person, and you've got a really great smile. You're definitely my favorite on the show (And so lucky! Getting to meet Bobby Flay and Giada and all sorts of big names! So jealous!)

Hi Aarti! When I saw you cook the lamb kebabs with pomegranate syrup, I had to try it. After visiting quite a few supermarkets, I finally found some ground lamb. I am glad I did not give up because last night I created your dish and it was fabulous! Thank you for sharing the recipe and I hope you are THE Next Food Network Star since your personality and recipes serve up a d’lish combination. You go girl!

First, let me tell you how lovely you looked in the green dress on The Next Food Network Star!
I saw this dish and had to make it! I have a question for you: You said on the show that you used Zaatar/Zahtar spice while making the dish. I have been looking for this spice and I discovered that there are a few varieties of it. Which specific spice blends do you recommend for Zaatar?

Not sure if you’ll see this, but I wanted to let you know I made this recipe today. I went to get my skewers, but they were ruined because something spilled on them in my pantry. What to do? I thought about your post on saving your salmon, so… I made the lamb into meatballs! I pan seared them and poured the glaze right in over top. They were wonderful, I never even thought to use ground lamb before. Yay!

Aarti…these are amazing. I like more coriander than parsley which is the indian in me…I added more garam masala. I made some toum and hummus and they were awesome. I’ve made them many times. Thanks for the great recipes!
